Not every dish needs a small fillet. For a full grilled breast, a stuffed main, or anything coated and fried, the 140–170g range gives you more to work with, so it holds its shape under heat instead of shrinking down. It’s the size most of our restaurant and catering customers reach for when the chicken is the centrepiece of the plate.

Why two trays, not one
